Homemade Mexican!

Saturdays always inspire me to cook!
Today, I shelled a bunch of red beans, and then inspiration took over!

I wonder if I have to soak fresh beans like I do dry beans?
hmm.  

I made homemade corn tortillas, stuffed them with cheese and green chiles,
topped it off with some homemade enchilada sauce, 
and served them to my "gringo" husband!
YUM!
